- Prepare the Chicken: Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5-7 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C). Let cool slightly, then slice or shred.
- Prepare the Avocado: In a small bowl, mash the avocado with lemon juice, salt, and pepper.
- Assemble the Sandwiches: Spread mayonnaise on one side of each slice of bread. On two slices of bread, layer half the cheddar cheese, half the sliced/shredded chicken, half the mashed avocado, and half the Monterey Jack cheese. Top with the remaining bread slices, mayonnaise-side up.
- Melt the Sandwiches: Heat a large skillet or griddle over medium heat. Place sandwiches in the skillet and cook for 3-4 minutes per side, or until golden brown and cheese is melted and gooey. Press down gently with a spatula to ensure even cooking and melting.
- Serve: Cut sandwiches in half and serve immediately.
Notes
For a spicier twist, add a dash of Sriracha to the avocado mixture or use the chicken from Garlic Chicken Wraps recipe for added flavor. Using a combination of cheddar and Monterey Jack provides the perfect balance of flavor and meltability. Spread mayonnaise on the outside of the bread for a golden-brown, crispy crust.
