  • 2 boneless, skinless chicken breasts about 6 oz each
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste
  • 1 ripe avocado
  • 1 tablespoon lemon juice
  • 4 slices sourdough bread
  • 4 slices cheddar cheese
  • 4 slices Monterey Jack cheese
  • 2 tablespoons mayonnaise
  • Optional: Sriracha, for a kick

Method
 

  1. Prepare the Chicken: Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5-7 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C). Let cool slightly, then slice or shred.
  2. Prepare the Avocado: In a small bowl, mash the avocado with lemon juice, salt, and pepper.
  3. Assemble the Sandwiches: Spread mayonnaise on one side of each slice of bread. On two slices of bread, layer half the cheddar cheese, half the sliced/shredded chicken, half the mashed avocado, and half the Monterey Jack cheese. Top with the remaining bread slices, mayonnaise-side up.
  4. Melt the Sandwiches: Heat a large skillet or griddle over medium heat. Place sandwiches in the skillet and cook for 3-4 minutes per side, or until golden brown and cheese is melted and gooey. Press down gently with a spatula to ensure even cooking and melting.
  5. Serve: Cut sandwiches in half and serve immediately.
