- Prepare the Tzatziki Sauce: While the chicken is marinating, prepare the tzatziki sauce. In a medium bowl, combine Greek yogurt, grated cucumber (squeezed dry), minced garlic, olive oil, lemon juice, and fresh dill. Season with salt and pepper to taste. Mix well and refrigerate until ready to use.
- Cook the Chicken: Preheat oven to 400°F (200°C). Spread the marinated chicken pieces in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the chicken is cooked through and slightly browned. Alternatively, you can pan-sear the chicken in batches over medium-high heat until cooked through and nicely browned.
- Warm the Pita Bread: Warm the pita bread in a dry skillet or microwave for a few seconds until pliable.
- Assemble the Gyros: Spread a generous amount of tzatziki sauce on each pita bread. Add a layer of cooked chicken, followed by sliced red onion, and tomato slices. Top with optional feta cheese and Kalamata olives.
