Ingredients
  

  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 4 cloves garlic, minced
  • 2 tablespoons dried oregano
  • 1 tablespoon dried rosemary
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and squeezed dry
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • Salt and pepper to taste
  • 6 pita breads
  • 1/2 red onion, thinly sliced
  • 1 tomato, sliced
  • Optional: Feta cheese
  • Optional: Kalamata olives

Method
 

  1. Marinate the Chicken: In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, dried rosemary, smoked paprika, salt, and pepper. Add the chicken pieces and toss to coat evenly. Cover and refrigerate for at least 2 hours, or preferably overnight, for optimal flavor.
  2. Prepare the Tzatziki Sauce: While the chicken is marinating, prepare the tzatziki sauce. In a medium bowl, combine Greek yogurt, grated cucumber (squeezed dry), minced garlic, olive oil, lemon juice, and fresh dill. Season with salt and pepper to taste. Mix well and refrigerate until ready to use.
  3. Cook the Chicken: Preheat oven to 400°F (200°C). Spread the marinated chicken pieces in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the chicken is cooked through and slightly browned. Alternatively, you can pan-sear the chicken in batches over medium-high heat until cooked through and nicely browned.
  4. Warm the Pita Bread: Warm the pita bread in a dry skillet or microwave for a few seconds until pliable.
  5. Assemble the Gyros: Spread a generous amount of tzatziki sauce on each pita bread. Add a layer of cooked chicken, followed by sliced red onion, and tomato slices. Top with optional feta cheese and Kalamata olives.

Notes

For best results, marinate the chicken overnight. Ensure the cucumber is thoroughly squeezed dry to prevent watery tzatziki sauce. You can use store-bought tzatziki sauce to save time. Leftovers can be stored in the refrigerator for up to 3 days.
