Ingredients

  • 6-8 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper optional
  • Salt to taste
  • Freshly ground black pepper to taste

Equipment

  • baking sheet
  • wire rack
  • mixing bowl
  • paper towels
  • Meat Thermometer
  • tongs

Method

  1. Prep the Chicken: Pat the chicken thighs thoroughly dry with paper towels.
  2. Season the Chicken: In a mixing bowl, combine the olive oil, paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper (if using), salt, and pepper. Mix well.
  3. Marinate the Chicken: Add the chicken thighs to the bowl and toss to coat evenly with the seasoning mixture. Ensure the seasoning gets under the skin where possible. Ideally, let the chicken marinate in the refrigerator for at least 30 minutes, or up to overnight.
  4. Preheat the Oven: Preheat your oven to 425°F (220°C).
  5. Arrange the Chicken: Place a wire rack on top of a baking sheet. Arrange the chicken thighs skin-side up on the wire rack, ensuring they are not overcrowded.
  6. Bake the Chicken: Bake for 35-40 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) using a meat thermometer. The skin should be golden brown and crispy.
  7. Rest the Chicken: Remove the chicken from the oven and let it rest for 5-10 minutes before serving.
  8. Serve: Serve immediately and enjoy.

Notes

For extra crispy skin, ensure the chicken is very dry before seasoning. Marinating overnight will enhance the flavor. Serve with roasted vegetables, mashed potatoes, or a fresh salad. Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
