Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 1/4 cup olive oil, for frying
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese, plus more for garnish
  • 1/4 tsp nutmeg
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish
  • 4 round loaves of bread sourdough or Italian work well
  • 4 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 1 cup steamed broccoli florets optional
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped optional

Method
 

  1. Prepare the Chicken: In a shallow dish, combine flour, salt, and pepper. In another shallow dish, place the beaten eggs. In a third shallow dish, combine panko breadcrumbs, Parmesan cheese, garlic powder, and oregano.
  2. Dip each chicken cube in the flour mixture, then the egg, and finally the breadcrumb mixture, ensuring it's fully coated.
  3. Heat olive oil in a large skillet over medium-high heat. Fry the chicken in batches until golden brown and cooked through, about 5-7 minutes. Remove and set aside on a wire rack to drain excess oil.
  4. Make the Alfredo Sauce: In a large saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  5. Pour in heavy cream and bring to a simmer, stirring occasionally. Reduce heat to low and simmer for 5 minutes, allowing the cream to thicken slightly.
  6. Stir in Parmesan cheese and nutmeg. Season with salt and pepper to taste. Continue stirring until the cheese is melted and the sauce is smooth and creamy.
  7. Prepare the Garlic Bread Bowls: Preheat oven to 350°F (175°C). Cut a circle out of the top of each bread loaf, leaving about a 1-inch border. Carefully hollow out the inside of each loaf, removing the soft bread (save for breadcrumbs or croutons!).
  8. In a small bowl, combine softened butter, minced garlic, chopped parsley, and Parmesan cheese. Spread the garlic butter mixture evenly inside each bread bowl.
  9. Place the bread bowls on a baking sheet and bake for 8-10 minutes, or until lightly toasted and golden brown.
  10. Assemble the Bowls: Add the fried chicken to the Alfredo sauce and stir to coat evenly. If using, stir in steamed broccoli and/or sun-dried tomatoes.
  11. Spoon the Chicken Alfredo mixture into each garlic bread bowl. Garnish with extra Parmesan cheese and fresh parsley. Serve immediately.

Notes

For best results, waterproof the bread bowls with a generous layer of garlic butter before toasting to prevent sogginess. Simmer the Alfredo sauce slowly, gradually adding the Parmesan cheese to prevent clumping. Use panko breadcrumbs for a crispy chicken coating. Serve immediately to maintain bread crispness.
