- Prepare the Chicken: In a shallow dish, combine flour, salt, and pepper. In another shallow dish, place the beaten eggs. In a third shallow dish, combine panko breadcrumbs, Parmesan cheese, garlic powder, and oregano.
- Dip each chicken cube in the flour mixture, then the egg, and finally the breadcrumb mixture, ensuring it's fully coated.
- Heat olive oil in a large skillet over medium-high heat. Fry the chicken in batches until golden brown and cooked through, about 5-7 minutes. Remove and set aside on a wire rack to drain excess oil.
- Make the Alfredo Sauce: In a large saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Pour in heavy cream and bring to a simmer, stirring occasionally. Reduce heat to low and simmer for 5 minutes, allowing the cream to thicken slightly.
- Stir in Parmesan cheese and nutmeg. Season with salt and pepper to taste. Continue stirring until the cheese is melted and the sauce is smooth and creamy.
- Prepare the Garlic Bread Bowls: Preheat oven to 350°F (175°C). Cut a circle out of the top of each bread loaf, leaving about a 1-inch border. Carefully hollow out the inside of each loaf, removing the soft bread (save for breadcrumbs or croutons!).
- In a small bowl, combine softened butter, minced garlic, chopped parsley, and Parmesan cheese. Spread the garlic butter mixture evenly inside each bread bowl.
- Place the bread bowls on a baking sheet and bake for 8-10 minutes, or until lightly toasted and golden brown.
- Assemble the Bowls: Add the fried chicken to the Alfredo sauce and stir to coat evenly. If using, stir in steamed broccoli and/or sun-dried tomatoes.
- Spoon the Chicken Alfredo mixture into each garlic bread bowl. Garnish with extra Parmesan cheese and fresh parsley. Serve immediately.
Notes
For best results, waterproof the bread bowls with a generous layer of garlic butter before toasting to prevent sogginess. Simmer the Alfredo sauce slowly, gradually adding the Parmesan cheese to prevent clumping. Use panko breadcrumbs for a crispy chicken coating. Serve immediately to maintain bread crispness. You can customize this recipe by adding other vegetables like mushrooms or spinach.
