- Prepare the Shrimp: If using uncooked shrimp, bring a pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes, or until pink and opaque. Immediately transfer to an ice bath to stop the cooking process. Drain well.
- Combine the Base: In a large bowl, whisk together the clamato juice, ketchup, lime juice, and orange juice (if using).
- Add the Vegetables and Spices: Stir in the red onion, tomato, cucumber, cilantro, and jalapeños. Season with salt and pepper to taste. Add hot sauce to your preferred level of spiciness.
- Incorporate the Shrimp: Gently fold in the cooked shrimp.
- Chill: Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours, to allow the flavors to meld.
- Serve: Divide the shrimp cocktail among serving glasses or bowls. Garnish with diced avocado and a lime wedge. Serve immediately.
Notes
For best results, use fresh, high-quality ingredients. Adjust the amount of jalapeños and hot sauce to your preferred spice level. Bottled lime juice is not recommended; use freshly squeezed lime juice for optimal flavor. Chill the cocktail thoroughly before serving to allow the flavors to meld and the shrimp to remain firm. For a variation, substitute tomato juice for clamato juice, adding a pinch of salt and a dash of Worcestershire sauce. The cocktail can be stored in the refrigerator for up to 24 hours.
