Ingredients

  • 1 pound large shrimp, peeled, deveined, and cooked
  • 1 cup clamato juice
  • ½ cup ketchup
  • ¼ cup fresh lime juice from about 2-3 limes
  • ¼ cup orange juice optional
  • ½ cup diced red onion
  • ½ cup diced tomato
  • ½ cup diced cucumber
  • ¼ cup chopped cilantro
  • 1-2 jalapeños, seeded and minced
  • 1-2 tablespoons hot sauce such as Valentina or Cholula
  • 1 avocado, diced
  • Salt to taste
  • Pepper to taste
  • Lime wedges, for serving
  • Water for boiling

Equipment

  • large pot
  • Ice bath
  • Large bowl
  • whisk
  • cutting board
  • knife
  • Serving glasses or bowls
  • measuring cups and spoons

Method

  1. Prepare the Shrimp: If using uncooked shrimp, bring a pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes, or until pink and opaque. Immediately transfer to an ice bath to stop the cooking process. Drain well.
  2. Combine the Base: In a large bowl, whisk together the clamato juice, ketchup, lime juice, and orange juice (if using).
  3. Add the Vegetables and Spices: Stir in the red onion, tomato, cucumber, cilantro, and jalapeños. Season with salt and pepper to taste. Add hot sauce to your preferred level of spiciness.
  4. Incorporate the Shrimp: Gently fold in the cooked shrimp.
  5. Chill: Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours, to allow the flavors to meld.
  6. Serve: Divide the shrimp cocktail among serving glasses or bowls. Garnish with diced avocado and a lime wedge. Serve immediately.

Notes

For best results, use fresh, high-quality ingredients. Adjust the amount of jalapeños and hot sauce to your preferred spice level. Bottled lime juice is not recommended; use freshly squeezed lime juice for optimal flavor. Chill the cocktail thoroughly before serving to allow the flavors to meld and the shrimp to remain firm. For a variation, substitute tomato juice for clamato juice, adding a pinch of salt and a dash of Worcestershire sauce. The cocktail can be stored in the refrigerator for up to 24 hours.
