  • 1.5 lbs 80/20 ground beef
  • 1 tbsp Big Mac seasoning
  • 6 small flour tortillas street taco size
  • 6 slices American cheese or cheddar
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp ground mustard
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/2 cup mayonnaise
  • 2 tbsp sweet pickle relish
  • 1 tbsp yellow mustard
  • 1 tsp white vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • 1 cup shredded lettuce
  • 1/2 cup finely diced white onion
  • 1/2 cup dill pickle slices, chopped
  • Sesame seeds for garnish

Method
 

  1. Prepare the Special Sauce: In a small bowl, whisk together the mayonnaise, sweet pickle relish, yellow mustard, white vinegar, garlic powder, onion powder, and paprika until smooth. Refrigerate until ready to use.
  2. Make the Big Mac Seasoning: In a small bowl, combine the onion powder, garlic powder, paprika, ground mustard, black pepper, and salt.
  3. Prepare the Ground Beef: Gently combine the ground beef and Big Mac seasoning. Avoid overmixing to keep the burgers tender. Divide the mixture into 6 equal portions (approximately 4 oz each).
  4. Smash the Burgers: Heat a large cast-iron skillet or griddle over medium-high heat. Place one portion of ground beef onto the hot surface. Immediately smash it down as thin as possible using a burger press or a sturdy spatula. Repeat with the remaining portions, leaving some space between each burger.
  5. Cook the Burgers: Cook for 2-3 minutes per side, until the edges are crispy and the center is cooked through. Flip and cook for another 1-2 minutes.
  6. Melt the Cheese: In the last 30 seconds of cooking, place a slice of cheese on each burger and allow it to melt.
  7. Assemble the Tacos: While the cheese is melting, place a flour tortilla directly on top of each burger in the skillet. This will slightly warm and soften the tortilla and help the burger adhere.
  8. Remove and Top: Carefully remove the burger-tortilla combination from the skillet. Spread a generous amount of special sauce onto the tortilla. Top with shredded lettuce, diced onion, and chopped pickles.
  9. Garnish: Sprinkle sesame seeds over the top of the lettuce for that signature Big Mac look.

Notes

For best results, use a very hot skillet to achieve a crispy sear on the smash burgers. Don't overmix the ground beef to keep the burgers tender. The special sauce can be made ahead of time and stored in the refrigerator for up to a week. For a spicier version, add a pinch of cayenne pepper to the Big Mac seasoning or special sauce. You can substitute cheddar cheese for American cheese. Leftovers can be stored in the refrigerator for up to 2 days. Reheat gently in a skillet or microwave.
