Ingredients
  

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil
  • 1 pound pasta penne, rotini, or ziti
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese, divided
  • 1 cup breadcrumbs Italian seasoned
  • 1/4 cup melted butter
  • Fresh basil leaves, for garnish optional

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. In a large bowl, toss the chicken cubes with Italian seasoning, garlic powder, salt, and pepper.
  3. Heat the olive oil in a large skillet over medium-high heat. Cook the chicken until browned on all sides and cooked through (about 5-7 minutes).
  4. In a large bowl, combine the cooked pasta, marinara sauce, cooked chicken, 1 cup of mozzarella cheese, and 1/4 cup of Parmesan cheese. Mix well.
  5. Pour the mixture into the prepared baking dish.
  6. In a small bowl, combine the breadcrumbs, melted butter, and remaining 1/4 cup of Parmesan cheese. Sprinkle evenly over the casserole.
  7. Top with the remaining 1/2 cup of mozzarella cheese.
  8. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the breadcrumbs are golden brown.
  9. Let stand for 5-10 minutes before serving. Garnish with fresh basil, if desired.

Notes

For best results, use high-quality marinara sauce. To prevent a soggy casserole, ensure the pasta is cooked al dente. Leftovers can be stored in the refrigerator for up to 3 days. For a spicier kick, add a pinch of red pepper flakes to the chicken or sauce. You can also add vegetables like bell peppers or mushrooms to the casserole.
