- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a large bowl, toss the potatoes with 2 tablespoons of olive oil, salt, pepper, and 1/2 tablespoon of Italian seasoning. Spread them in a single layer on one side of the prepared baking sheet.
- In a separate large bowl, combine the chicken cubes with the remaining olive oil, minced garlic, garlic powder, paprika, the remaining Italian seasoning, salt, and pepper. Toss to coat evenly.
- Spread the chicken cubes in a single layer on the other side of the baking sheet, ensuring they aren't overcrowded.
- Bake for 20 minutes.
- Remove the baking sheet from the oven. Drizzle the melted butter over the chicken and potatoes. Sprinkle the Parmesan cheese evenly over both.
- Return to the oven and broil for 2-3 minutes, or until the Parmesan cheese is melted and golden brown. Watch carefully to prevent burning!
- Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh parsley.
Notes
For best results, thoroughly dry the chicken and potatoes before seasoning. Cut the chicken and potatoes into uniform sizes to ensure even cooking. Consider using freshly grated Parmesan for better melting and flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
