- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess grease.
- Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more, until fragrant.
- Stir in diced tomatoes, tomato sauce, oregano, basil, red pepper flakes (if using), salt, and pepper.
- Bring to a simmer, then reduce heat and cook for 15 minutes, stirring occasionally.
- Stir in cottage cheese until melted and evenly distributed.
- Continue cooking for 5 minutes, or until heated through.
- Remove from heat and stir in Parmesan cheese (if using).
- Garnish with fresh parsley and serve hot.
Notes
Serve over brown rice, quinoa, or pasta. Can be served with a side salad for a complete meal. For a creamier texture, use full-fat cottage cheese. Store leftovers in an airtight container in the refrigerator for up to 3 days.
