High Protein Slow Cooker Beef Bites

Ingredients
  

  • 2 lbs Beef Chuck, cut into 1-inch cubes
  • 2 tbsp Olive Oil
  • 2 tbsp Butter
  • 4 cloves Garlic, minced
  • 1 large Onion, chopped
  • 1 cup Beef Broth
  • 1/2 cup Dry Red Wine optional
  • 2 tbsp Worcestershire Sauce
  • 1 tbsp Soy Sauce low sodium
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • 1/2 tsp Smoked Paprika
  • Salt to taste
  • Black Pepper to taste
  • 2 tbsp Cornstarch optional
  • 2 tbsp Cold Water optional
  • Fresh parsley optional garnish
  • Mashed potatoes, rice, or desired sides for serving

Method
 

  1. Heat olive oil and butter in a large skillet over medium-high heat. Working in batches, sear the beef cubes on all sides until browned. Season generously with salt and pepper.
  2. Add the minced garlic and chopped onion to the skillet and sauté until softened and fragrant, about 3-5 minutes.
  3. Pour in the red wine (if using) and scrape up any browned bits from the bottom of the skillet. Let it simmer for a minute or two to reduce slightly.
  4. Transfer the seared beef, sautéed aromatics, and deglazed wine (if using) to the slow cooker.
  5. Pour in the beef broth, Worcestershire sauce, soy sauce, thyme, rosemary, and smoked paprika. Season with additional salt and pepper to taste.
  6. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is very tender.
  7. If you prefer a thicker sauce, whisk together the cornstarch and cold water to create a slurry. Stir the slurry into the slow cooker during the last 30 minutes of cooking.
  8. Serve the High Protein Slow Cooker Beef Bites over mashed potatoes, rice, or your favorite side dish. Garnish with fresh parsley, if desired.

Notes

For richer flavor, use bone broth instead of regular beef broth. Adding a pat of garlic butter at the end enhances the dish. Beef can be cooked on high for 3-4 hours for faster results but keep an eye on the tenderness. Leftovers can be stored in the refrigerator for up to 3 days.
