  • 2 tbsp Soy Sauce low sodium
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Olive Oil
  • 1 tsp Dried Thyme
  • 1/2 tsp Red Pepper Flakes optional
  • Salt to taste
  • Pepper to taste
  • Chopped fresh parsley or green onions optional garnish

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with olive oil, salt, pepper, and dried thyme.
  3. Spread sweet potatoes in a single layer on a baking sheet.
  4. In a large skillet, brown the sausage over medium-high heat, breaking it up with a spoon as it cooks.
  5. Drain off any excess grease from the sausage.
  6. In a small bowl, whisk together the minced garlic, honey, soy sauce, and apple cider vinegar. Add red pepper flakes if desired.
  7. Add the browned sausage to the baking sheet with the sweet potatoes.
  8. Pour the honey garlic glaze evenly over the sweet potato and sausage mixture.
  9. Toss everything together to ensure it's well coated.
  10. Bake for 25-30 minutes, or until the sweet potatoes are tender and the sausage is cooked through, and the glaze is bubbly and caramelized.
  11. Stir halfway through cooking to ensure even browning.
  12. Garnish with chopped fresh parsley or green onions, if desired.
  13. Serve hot.

Notes

Italian sausage is a classic choice, but you can experiment with other types of sausage, such as chorizo or chicken sausage. Sweet potato variety can be any type.
