- Prepare the Chicken: In a medium bowl, toss the chicken cubes with olive oil, Italian seasoning, garlic powder, salt, and pepper. Ensure the chicken is evenly coated.
- Pre-cook the Chicken (Optional, but Recommended): This step helps ensure the chicken is fully cooked before the tortilla becomes too brown. You have two options: Stovetop: Heat a skillet over medium-high heat. Cook the chicken, stirring occasionally, until cooked through (internal temperature of 165°F), about 5-7 minutes. Air Fryer: Preheat air fryer to 375°F (190°C). Place chicken in a single layer in the air fryer basket. Cook for 6-8 minutes, or until cooked through.
- Assemble the Wraps: Lay out the tortillas on a clean surface. Spread 2 tablespoons of marinara sauce evenly over each tortilla. Top with ¼ of the cooked chicken, 2 slices of mozzarella cheese, and 1 tablespoon of Parmesan cheese.
- Wrap it Up: Fold in the sides of the tortilla, then tightly roll it up, starting from the bottom.
- Air Fry the Wraps: Preheat air fryer to 350°F (175°C). Place the wrapped tortillas in the air fryer basket, seam-side down, ensuring they are not overcrowded. You may need to cook them in batches.
- Cook to Perfection: Air fry for 6-8 minutes, or until the tortillas are golden brown and crispy, and the mozzarella cheese is melted and gooey. Flip the wraps halfway through cooking to ensure even browning.
- Serve: Carefully remove the wraps from the air fryer. Let them cool slightly before slicing in half. Garnish with fresh basil leaves, if desired. Serve immediately.
Notes
For extra crispy tortillas, lightly spray the outside of the wraps with cooking oil before air frying. Adjust cooking time based on your air fryer model. If using frozen chicken, make sure it is completely thawed before cooking. These wraps are also fantastic with different cheeses, such as provolone or pepper jack. Consider adding vegetables like sautéed bell peppers or onions to the filling. Store leftovers in the refrigerator for up to 3 days.
