- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, brown ground beef over medium heat. Drain off any excess grease.
- Add onion and cook until softened, about 5 minutes.
- Stir in tomato sauce, diced tomatoes and green chilies, chili powder, cumin, garlic powder, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.
- In a separate bowl, beat cream cheese and sour cream until smooth. Stir in 1 cup of the shredded cheddar cheese.
- In a 9x13 inch baking dish, spread half of the meat mixture evenly over the bottom.
- Top with the cream cheese mixture, spreading evenly.
- Sprinkle with the remaining meat mixture.
- Top with the crushed Doritos and remaining 1 cup of cheddar cheese.
- Bake for 20-25 minutes, or until heated through and the cheese is melted and bubbly.
- Let stand for 5-10 minutes before serving.
Notes
For less sodium, use low-sodium tomato sauce and carefully measure the salt added to the ground beef mixture. Experiment with different cheeses like Monterey Jack or pepper jack for added flavor. Freshly shredded cheese melts better than pre-shredded. Store leftovers in an airtight container in the refrigerator for up to 3 days.
