Ingredients

  • 2 lbs Beef Chuck Roast, cut into 1-inch cubes
  • 4 tbsp Olive Oil, divided
  • 4 cloves Garlic, minced
  • 1/2 cup Beef Broth
  • 4 tbsp Butter, unsalted
  • 2 tbsp Worcestershire Sauce
  • 1 tsp Dried Thyme
  • 1/2 tsp Smoked Paprika
  • Salt to taste
  • Black Pepper to taste
  • Optional: Fresh Parsley, chopped, for garnish

Equipment

  • Slow cooker
  • large skillet
  • Measuring spoons
  • Measuring cups
  • knife
  • cutting board
  • Mixing spoon
  • fork

Method

  1. Sear the Beef: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Working in batches, sear the beef cubes on all sides until browned. Do not overcrowd the pan.
  2. Prepare the Slow Cooker: Place the seared beef cubes in the slow cooker.
  3. Make the Garlic Butter Sauce: In the same skillet, melt the butter over medium heat. Add the remaining 2 tablespoons of olive oil and minced garlic and cook for about 1 minute, until fragrant, being careful not to burn the garlic.
  4. Add Flavor: Stir in the beef broth, Worcestershire sauce, thyme, and smoked paprika. Season with salt and pepper to taste.
  5. Combine: Pour the garlic butter sauce over the beef in the slow cooker.
  6. Slow Cook: Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until the beef is very tender and easily shreds with a fork.
  7. Serve: Serve the High Protein Slow Cooker Garlic Butter Beef Bites over mashed potatoes, rice, or noodles. Garnish with fresh parsley, if desired.

Notes

For maximum tenderness, cook on low for 6-8 hours. Taste and adjust seasoning (salt, pepper) as needed before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days. Experiment with different herbs and spices to customize the flavor to your liking. A quick sear is essential for developing flavor and locking in moisture.
