- Pat the shrimp dry with paper towels.
- In a small bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, and red pepper flakes (if using).
- In another small bowl, mix cornstarch and water to create a slurry.
- Heat olive oil in a large skillet over medium-high heat.
- Add the shrimp in a single layer and cook for 1-2 minutes per side, until pink and slightly browned. Work in batches if necessary.
- Push the shrimp to one side of the skillet and add the minced garlic. Cook for about 30 seconds, until fragrant, being careful not to burn it.
- Pour the honey garlic sauce over the shrimp and garlic. Bring to a simmer.
- Stir in the cornstarch slurry. Cook for 1-2 minutes, or until the sauce has thickened and coats the shrimp evenly.
- Remove from heat and garnish with chopped green onions and sesame seeds.
- Serve immediately over rice, noodles, or vegetables.
