Ingredients
  

  • 1 pound ground beef 80/20 blend
  • 1/2 pound ground pork
  • 1/2 cup finely ground pork rinds
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs, lightly beaten
  • 4 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup unsalted butter 1 stick
  • 6 cloves garlic, minced
  • 1/4 cup chicken broth
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes optional
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, ground pork, pork rinds, Parmesan cheese, eggs, minced garlic, parsley, Italian seasoning, salt, and pepper.
  3. Gently mix all ingredients until just combined. Be careful not to overmix.
  4. Roll the mixture into 1-inch meatballs.
  5. Place the meatballs on the prepared baking sheet.
  6. Bake for 20-25 minutes, or until the meatballs are cooked through and lightly browned.
  7. While the meatballs are baking, prepare the garlic butter sauce.
  8. In a medium saucepan, melt the butter over medium heat.
  9. Add the minced garlic and cook for 1-2 minutes, or until fragrant, being careful not to burn the garlic.
  10. Stir in the chicken broth, parsley, lemon juice, and red pepper flakes (if using).
  11. Bring the sauce to a simmer and cook for 2-3 minutes, or until slightly thickened.
  12. Season with salt and pepper to taste.
  13. Once the meatballs are cooked, remove them from the oven and add them to the garlic butter sauce.
  14. Gently toss the meatballs to coat them evenly in the sauce.
  15. Serve immediately.

For best results, use an 80/20 ground beef blend and combine it with ground pork for optimal fat content and flavor. Finely grind the pork rinds into a powder-like consistency using a food processor or blender to ensure even distribution. Baking the meatballs in the oven allows them to cook evenly and prevents them from becoming greasy. Sauté the minced garlic gently in butter until fragrant, being careful not to burn it. Serve over zucchini noodles or cauliflower rice for a complete keto meal.
