Ingredients
  

  • 2 lbs ground chicken
  • 1 cup breadcrumbs plain or Italian-seasoned
  • 1/2 cup grated Parmesan cheese, plus extra for topping
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg, lightly beaten
  • 1/4 cup milk or chicken broth
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 1/4 cup grated Parmesan cheese for topping
  • 1 tablespoon olive oil for topping

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x5 inch loaf pan.
  2. In a large mixing bowl, combine all meatloaf ingredients: ground chicken, breadcrumbs, Parmesan cheese, onion, garlic, egg, milk, parsley, oregano, salt, pepper, and red pepper flakes (if using).
  3. Gently mix all ingredients together with your hands until just combined. Be careful not to overmix.
  4. Transfer the meatloaf mixture to the prepared loaf pan. Gently press it down to ensure it's evenly distributed.
  5. In a small bowl, combine the remaining Parmesan cheese and olive oil. Mix well to form a paste.
  6. Spread the Parmesan cheese mixture evenly over the top of the meatloaf.
  7. Bake for 50-60 minutes, or until the internal temperature reaches 165°F (74°C). Use a meat thermometer to check for doneness.
  8. Let the meatloaf rest for 10-15 minutes before slicing and serving. This allows the juices to redistribute.

Notes

For added flavor, use Italian-seasoned breadcrumbs. You can also add a small amount of grated butter to the meatloaf mixture to help keep it moist. Serve with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad. Leftovers can be stored in the refrigerator for up to 3 days.
