Slow Cooker Garlic Butter Beef and Potatoes

  • 2-3 lbs Chuck Roast, cut into 1-inch cubes
  • 1.5 lbs Yukon Gold Potatoes, peeled and cut into 1-inch cubes
  • 1 large Yellow Onion, chopped
  • 4 cloves Garlic, minced
  • 1/2 cup Beef Broth
  • 1/4 cup Unsalted Butter
  • 2 tbsp Olive Oil
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Dried Thyme
  • 1/2 tsp Dried Rosemary
  • 1/4 tsp Red Pepper Flakes optional
  • Salt to taste
  • Black Pepper to taste
  • 2 tbsp Fresh Parsley, chopped for garnish

Method
 

  1. Sear the Beef (Optional but Recommended): Heat olive oil in a large skillet over medium-high heat. Sear the beef cubes in batches until browned on all sides. Season with salt and pepper.
  2. Layer the Ingredients: Place the chopped onion in the bottom of the slow cooker. Top with the cubed potatoes. Add the seared beef cubes on top of the potatoes.
  3. Garlic Butter Sauce: In a small bowl, combine the minced garlic, melted butter, beef broth, Worcestershire sauce, thyme, rosemary, and red pepper flakes (if using). Season with salt and pepper.
  4. Slow Cook: Pour the garlic butter sauce over the beef and potatoes. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  5. Check for Tenderness: The beef should be very tender and easily shredded with a fork. If not, continue cooking for another hour.
  6. Serve: Garnish with fresh parsley before serving. Serve hot.

For best results, sear the beef before adding it to the slow cooker to develop a rich, savory flavor. Yukon Gold potatoes are recommended as they hold their shape well during slow cooking.
