- Prepare the Sauce: In a small bowl, whisk together soy sauce, rice vinegar, honey, cornstarch, sesame oil, and chicken broth. Set aside.
- Brown the Turkey: Heat the avocado oil in a large wok or skillet over high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned and cooked through. Remove the turkey from the skillet and set aside.
- Sauté the Vegetables: Add the sliced onion and bell peppers to the skillet and cook over medium-high heat until softened and slightly caramelized, about 5-7 minutes. Add the minced garlic, ginger, and jalapeños, and cook for another minute until fragrant.
- Combine and Simmer: Return the cooked ground turkey to the skillet with the vegetables. Pour the sauce over the mixture and bring to a simmer, stirring constantly until the sauce thickens, about 1-2 minutes.
- Serve: Serve the Spicy Ground Turkey and Peppers Stir-Fry over rice, quinoa, or noodles. Garnish with red pepper flakes, sesame seeds, and chopped green onions, if desired.
Notes
For extra spice, use serrano peppers instead of jalapeños. To prevent overcrowding the pan, cook the turkey in batches. Other vegetables such as broccoli florets, snap peas, or carrots can be added. Adjust cooking time accordingly. Store leftovers in an airtight container in the refrigerator for up to 3 days.
